pistachio pudding

rx

fill 1 pt mason jar with raw pistachios;
add:
1/4 tsp vitamin C
1/4 c lemon juice
distilled water to cover;
put lid on jar, shake well, and let soak overnite;
empty jar into vitamix container;
add:
1 c distilled water
1/4 c pineapple butter
1/4 c pistachio butter

using tamper as necessary, puree;
pour & scrape into serving dishes;
cover dishes with lids;
store in refrigerator
