pistachio cake

rx

 pulse blend hi to powder in vitamix "dry container":
1 c pistachio flour
3/4 c chopped raw pistachios
1/4 c buckwheat flour
1/4 c coconut flour
1/4 tsp ground fenugreek
1/8 tsp baking soda
1 tsp non-aluminum baking powder

transfer to vitamix 2L container;
pulse blend hi until fine powder;

blend lo in vitamix "wet container":
1/4 c lemon juice
1 egg
1/4 c greek yogurt

add:
1/4 c pistachio butter
1/4 c crystallized ginger butter

blend lo;

pour & scrape wet ingredients into dry ingredients;
stir, pulse, then blend lo to med;

add:
1/2 c seltzer

pulse, then brief blend lo;

pour & scrape into pyrex baking dish lined with parchment or
silicone baking mat;

bake 350F 1 hr 15 min

when cool,
remove from baking dish and remove liner
